Ingredients:
200 g lean beef, sliced
1 bell pepper, sliced
1 carrot, sliced
1/2 red onion, sliced
2 cloves garlic, minced
2 tablespoons low-sodium soy sauce or tamari
1 tablespoon olive oil
2 bundles of whole grain noodles, cooked according to package instructions
Instructions:
Heat the olive oil in a large skillet or wok over medium heat. Add the sliced beef and cook until it’s no longer pink. Remove the beef from the skillet and set it aside.
In the same skillet, add the bell pepper, carrot, red onion, and garlic. Stir fry for about 5-7 minutes until the vegetables are tender.
Return the beef to the skillet and stir in the soy sauce or tamari. Stir fry for another 2-3 minutes to combine all the flavors.
Serve the beef stir fry over cooked whole grain noodles.
How to Serve:
Serve the Lean Beef Stir Fry with Whole Grain Noodles hot, straight from the skillet. You can garnish it with some sesame seeds or chopped green onions for extra flavor.
