Ingredients:
Cooking spray
2 cups whole wheat flour
1/4 cup sugar
2 teaspoons baking powder
1/4 teaspoon salt
1/4 teaspoon cinnamon
3/4 cup almond milk
1/4 cup unsalted butter, melted
2 eggs
1 teaspoon vanilla extract
1 cup fresh or frozen blueberries
Directions:
1. Preheat the air fryer to 325°F and spray a muffin tin with cooking spray.
2. In a large bowl, whisk together flour, sugar, baking powder, salt, and cinnamon until well combined.
3. In a small bowl, whisk together milk, butter, eggs, and vanilla until well combined.
4. Add the wet ingredients to the dry ingredients and stir until just moistened. Fold in blueberries gently.
5. Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full. You may need to work in batches depending on the size of your muffin tin and air fryer basket.
6. Place the muffin tin in the air fryer basket and cook for 15 minutes or until a toothpick inserted in the center comes out clean.
7. Let the muffins cool slightly in the tin before transferring to a wire rack to cool completely.
