Ingredients:
For the Veggie Sticks:
1 large carrot
1 cucumber
1 bell pepper
For the Hummus:
1 cup canned chickpeas, rinsed and drained
2 tablespoons tahini
2 tablespoons lemon juice
1 clove garlic, minced
2 tablespoons olive oil
Salt to taste Paprika for garnish (optional)
Instructions:
For the Veggie Sticks:
Wash and peel the carrot. Cut into thin sticks.
Wash the cucumber and bell pepper. Cut the cucumber into thin sticks and the bell pepper into thin slices.
For the Hummus:
In a food processor, combine the chickpeas, tahini, lemon juice, and minced garlic.
While the food processor is running, slowly drizzle in the olive oil until the mixture is smooth and creamy. If needed, add a little water to achieve the desired consistency.
Season with salt to taste.
Serving:
Serve the veggie sticks with the hummus on the side. Sprinkle the hummus with paprika for extra flavor if desired.
