Ingredients:
Cooking spray
6 ounces Mexican-style chorizo sausage, casings removed
1/4 cup diced onion
1/4 cup diced serrano pepper (optional)
2 cups frozen diced potatoes
Salt and black pepper, to taste
6 eggs, beaten 6 (8 inch) flour tortillas
Shredded cheese, salsa, sour cream, cilantro, etc., for serving (optional)
Directions:
1. Preheat the air fryer to 350°F and spray the basket with cooking spray.
2. In a large skillet over medium-high heat, cook chorizo, breaking it up with a spatula, until browned and cooked through, about 10 minutes. Transfer to a plate and keep warm.
3. In the same skillet over medium-high heat, cook onion and serrano pepper (if using) until soft, about 5 minutes. Add potatoes and season with salt and pepper. Cook, stirring occasionally, until potatoes are golden and crisp, about 15 minutes.
4. In a small bowl, whisk eggs with a pinch of salt and pepper. In another skillet over medium-low heat, cook eggs, stirring gently, until scrambled, about 10 minutes.
5. To assemble the burritos, lay a tortilla on a flat surface and spoon some chorizo, potato mixture, and eggs on one end. Sprinkle some cheese on top if desired. Fold in the sides and roll up tightly from the bottom. Repeat with the remaining tortillas and fillings.
6. Place two burritos in the air fryer basket seam-side down and spray lightly with cooking spray. Cook for 5 minutes or until golden and crisp. Repeat with the remaining burritos.
7. Serve with your favorite toppings if desired.
