Instructions:
In a large salad bowl, combine the chopped romaine lettuce, croutons, and grated Parmesan cheese.
In a separate small bowl, whisk together the mayonnaise, lemon juice, Dijon mustard, minced garlic, anchovy fillets or anchovy paste (if using), grated Parmesan cheese, extra virgin olive oil, salt, and pepper to make the dressing.
