Ingredients:
6 cups of baby spinach leaves
1 cup of pomegranate arils (seeds)
1/2 cup of crumbled goat cheese
1/4 cup of candied walnuts (or regular walnuts)
2 tablespoons of red onion, thinly sliced
2 tablespoons of fresh lemon juice
2 tablespoons of extra virgin olive oil
1 teaspoon of honey Salt and pepper to taste
Instructions:
In a large salad bowl, place the baby spinach leaves. Add the pomegranate arils, crumbled goat cheese, candied walnuts, and sliced red onion on top of the spinach.
In a small bowl, whisk together the fresh lemon juice, extra virgin olive oil, honey, salt, and pepper to make the dressing.
Drizzle the dressing over the salad ingredients. Toss gently to coat all the ingredients evenly. Adjust the seasoning if needed.
Let the salad sit for a few minutes to allow the flavors to meld together. Serve the Pomegranate and Spinach Salad as a refreshing and vibrant side dish or light meal.
