Spaghetti Squash with Meat and Vegetable Marinara

Ingredients:

1 medium spaghetti squash

Salt and pepper, to taste

1 tablespoon olive oil

8 oz lean ground beef

4 cloves of garlic, minced

1/4 teaspoon red pepper flakes (optional)

2 cups marinara sauce (homemade or store-bought)

1 cup chopped zucchini

1/4 cup chopped fresh basil

 

Directions:

1. Cut the spaghetti squash in half and scoop out the seeds. Season with salt and pepper and place cut-side down in an air fryer basket. Cook at 375°F for 30 minutes or until tender.

2. Meanwhile, heat oil in a large skillet over medium-high heat. Add the beef and cook, breaking it up with a spatula, until browned and cooked through, about 15 minutes. Drain the excess fat if needed.

3. Add the garlic and red pepper flakes if using and cook for another minute, stirring constantly.

4. Add the marinara sauce and zucchini and bring to a boil. Reduce the heat and simmer until the zucchini is soft, about 10 minutes.

5. Stir in the basil and season with salt and pepper to taste.

6. Using a fork, scrape out the spaghetti squash strands into a large bowl. Serve topped with the meat and vegetable marinara sauce.
