Peanut Butter Banana Muffins

Ingredients:

Cooking spray

2 ripe bananas, mashed

1/4 cup peanut butter

1/4 cup honey

2 eggs

1 teaspoon vanilla extract

1/4 cup plain Greek yogurt

1/4 cup almond milk

2 cups whole wheat flour

1 teaspoon baking soda

1/4 teaspoon salt

Optional: chocolate chips, nuts, dried fruits, etc.

 

Directions:

1. Preheat the air fryer to 325°F and spray a muffin tin with cooking spray.

2. In a large bowl, whisk together bananas, peanut butter, honey, eggs, vanilla, yogurt, and milk until well combined.

3. In a medium bowl, whisk together flour, baking soda, and salt. Add the dry ingredients to the wet ingredients and stir until just moistened. Fold in any optional add-ins if desired.

4. Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full. You may need to work in batches depending on the size of your muffin tin and air fryer basket.

5. Place the muffin tin in the air fryer basket and cook for 15 minutes or until a toothpick inserted in the center comes out clean.

6. Let the muffins cool slightly in the tin before transferring to a wire rack to cool completely.
