Ingredients:
2 chicken breasts
2 cups mixed salad greens
1/2 cucumber, sliced
1 medium tomato, diced
1/2 red onion, thinly sliced
1/4 cup feta cheese, crumbled
1/4 cup kalamata olives
For the dressing:
2 tablespoons olive oil
1 tablespoon red wine vinegar
1/2 teaspoon dried oregano
salt and pepper to taste
Instructions:
Grill the chicken breasts until fully cooked, about 6-7 minutes on each side. Allow them to rest for a few minutes, then slice into strips.
In a large bowl, combine the salad greens, cucumber, tomato, red onion, feta cheese, and kalamata olives.
To make the dressing, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper.
Add the grilled chicken to the salad and drizzle the dressing over everything. Toss to combine.
